- 1 recipe homemade pie crust, use half
- 3–4 medium peaches, sliced (about 3 cups)
- 1 tablespoon granulated sugar
- 1 ½ tablespoons cornstarch
- ½ teaspoon ground cinnamon
- 1 large egg, beaten
- 1 teaspoon turbinado sugar
- honey, optional, for serving
- vanilla ice cream, optional, for serving
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Roll out the pie crust into a 14-inch circle, about ⅛-inch thick, and place it on the prepared baking sheet. Refrigerate while making the filling.
- Combine the sliced peaches, granulated sugar, cornstarch, and cinnamon in a medium bowl, tossing to coat. Let sit for about 10 minutes to develop juices.
- Remove the chilled pie crust and fill the center with the peach mixture, leaving a 2-inch border.
- Fold the edges of the dough over the filling, making pleats to create a rustic look.
- Brush the exposed crust with the beaten egg and sprinkle with turbinado sugar.
- Bake for 30–35 minutes until the crust is golden and the filling bubbles. If browned too quickly, cover the edges with foil.
- Allow the galette to cool for at least 10 minutes before serving.
- Drizzle with honey and add vanilla ice cream if desired.
Notes
For a sweeter filling, add more sugar to the peaches if desired.
Serve warm for the best flavor and texture.
