Description

Enjoy these delicious Peach Muffins, featuring juicy peaches and a sweet crumb topping. They are easy to make, perfect for breakfast or a snack!


Ingredients

  • 4 cups (480g) all purpose flour
  • 1 ¾ cups (347g) granulated sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • ¼ tsp nutmeg or cinnamon
  • 4 large eggs
  • ¾ cup (177ml) buttermilk
  • ½ cup (118ml) vegetable oil
  • 4 tbsp (57g) unsalted butter, melted & cooled
  • 2 tsp vanilla extract
  • 1 ½2 cups (255-340g) diced peaches
  • ¾ cup (90g) all-purpose flour
  • ⅓ cup (71g) brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • ¼ cup (57g) unsalted butter, melted
  • ¼ cup (28g) powdered sugar
  • ½ tsp vanilla extract
  • 1 tsp milk

Instructions

  1. In a mixing bowl, combine flour, granulated sugar, baking powder, salt, and nutmeg or cinnamon. Stir to mix and set aside.
  2. In another larger bowl, whisk together eggs, buttermilk, vegetable oil, melted butter, and vanilla extract until well combined.
  3. Gradually fold the dry mixture into the wet mixture until just combined. Carefully fold in diced peaches. The batter will be thick!
  4. Cover the bowl with a towel and let the batter rest for 15 minutes. Meanwhile, preheat the oven to 425ºF and prepare the crumb topping.
  5. For the crumb topping, combine flour, brown sugar, cinnamon, salt, and melted butter in a mixing bowl. Mix with your hands to form crumbs. Set aside.
  6. Prepare a 12-cup muffin pan with 6 liners, filling every other muffin well. Fill each liner with batter to the top and press additional diced peaches on top. Sprinkle the crumb mixture over each muffin and then add sanding sugar.
  7. Bake at 425ºF for 7 minutes, then lower the temperature to 350ºF and bake for an additional 15-20 minutes until a toothpick comes out clean. Let the muffins cool in the pan before removing.

Notes

Ensure to let the muffin batter rest for the best texture.
Feel free to swap peaches with other fruits based on availability and preference.
For added flavor, you can sprinkle some cinnamon on top of the muffins before baking.
