Ingredients

Scale
  • 4 ripe peaches, cubed
  • 2/3 cup light brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Instructions

  1. Cube the peaches, peeling them if fresh, or thawing if frozen.
  2. In a medium saucepan over medium heat, combine the peaches, brown sugar, cinnamon, lemon juice, and cornstarch.
  3. Stir until well mixed and heat until the peach juice separates, bringing the mixture to a simmer.
  4. Cook for about 10 minutes, stirring occasionally, until the mixture thickens.
  5. Use a potato masher to lightly mash about 20% of the peaches, then cook for an additional minute before removing from heat.
  6. Allow the filling to cool completely before using.

Notes
