  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla bean paste or extract
  • 2 to 3 large peaches (sliced)

Instructions

  1. In a shallow bowl, whisk together half-and-half, eggs, vanilla extract, sugar, and cinnamon until smooth. Blending can help incorporate the cinnamon thoroughly.
  2. Dip each slice of challah or brioche bread into the custard mixture, letting it soak for 20 seconds per side without falling apart.
  3. Heat a griddle or skillet over medium-low and grease with butter. Cook each slice for 3-5 minutes per side until golden brown.
  4. While cooking, whip the heavy cream, powdered sugar, and vanilla bean paste until soft-to-stiff peaks form.
  5. Slice fresh peaches into wedges; toss with a little sugar for extra flavor if desired.
  6. Serve by stacking the French toast, topping with whipped cream, fresh sliced peaches, and maple syrup.

Notes

For a richer flavor, use heavy cream in the custard.
