- 1 cup (240 g) buttermilk, room temperature
- ½ cup (112 g) vegetable oil
- 2 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- 1 cup (237 g) freshly brewed hot coffee, or hot water
- 1 ½ cups (3 sticks / 340 g) unsalted butter, room temperature
- 4 cups (500 g) confectioners' sugar
- ¾ cup (88.5 g) cocoa powder
- 2 teaspoons vanilla extract
- 1 pinch table salt
- 4 tablespoons heavy whipping cream
Instructions
- Preheat the oven to 350°F. Spray a 9×13-inch baking dish with nonstick cooking spray and set aside.
- In a stand mixer, combine flour, sugar, cocoa powder, baking soda, baking powder, and salt. Mix until well combined.
- In another bowl, whisk together buttermilk, vegetable oil, eggs, and vanilla extract.
- With the mixer on low speed, gradually add the wet ingredients into the dry mixture.
- Slowly add hot coffee or water and mix until just combined, making sure to scrape down the bowl as necessary.
- Pour the batter into the prepared pan, then tap the pan on the countertop to release any air bubbles.
- Bake for 28 to 32 minutes, checking doneness with a toothpick; it should come out with moist crumbs.
- Allow the cake to cool completely in the pan on a wire rack.
Notes
For extra flavor, try adding a pinch of espresso powder to the batter.
