Description

This Pineapple Whip offers an irresistible blend of frozen pineapple and banana, creating a creamy, refreshing treat. Ideal for a quick, healthy dessert that everyone will love!


Ingredients

  • 1 banana peeled, sliced, and frozen
  • 3 cups frozen pineapple chunks about 1 1/2 pounds
  • 1/2 cup full-fat coconut cream
  • 1/4 cup sweetened pineapple juice
  • 23 teaspoons freshly squeezed lemon juice
  • 1/2 teaspoon pure vanilla extract
  • honey to taste

Instructions

  1. In a food processor, combine the banana, 1 1/2 cups of pineapple, coconut cream, pineapple juice, 2 teaspoons of lemon juice, and vanilla. Process for about 5 minutes until mostly smooth.
  2. Add the remaining 1 1/2 cups of pineapple. Continue processing for an additional 2 to 3 minutes until the mixture is very smooth and creamy. If needed, pulse to break up any large chunks of pineapple.
  3. Taste the mixture and add the remaining 1 teaspoon of lemon juice and honey if additional sweetness is desired. Serve immediately.

Notes

For a sweeter flavor, adjust the amount of honey according to your taste.
Serve immediately after preparing for the best texture.
This dish can be made with fresh or frozen fruit, but frozen yields the creamiest result.
