- 1 banana peeled, sliced, and frozen
- 3 cups frozen pineapple chunks about 1 1/2 pounds
- 1/2 cup full-fat coconut cream
- 1/4 cup sweetened pineapple juice
- 2–3 teaspoons freshly squeezed lemon juice
- 1/2 teaspoon pure vanilla extract
- honey to taste
Instructions
- In a food processor, combine the banana, 1 1/2 cups of pineapple, coconut cream, pineapple juice, 2 teaspoons of lemon juice, and vanilla. Process for about 5 minutes until mostly smooth.
- Add the remaining 1 1/2 cups of pineapple. Continue processing for an additional 2 to 3 minutes until the mixture is very smooth and creamy. If needed, pulse to break up any large chunks of pineapple.
- Taste the mixture and add the remaining 1 teaspoon of lemon juice and honey if additional sweetness is desired. Serve immediately.
Notes
For a sweeter flavor, adjust the amount of honey according to your taste.
