- ½ cup (119g) vegetable oil
- ¾ cup (180g) pumpkin puree
- 2 medium overripe bananas
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Prepare a 9×5-inch loaf pan by spraying it with nonstick cooking spray or greasing and flouring it.
- In a small bowl, whisk together the flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt. Set this mixture aside.
- In a large bowl, combine brown sugar, vegetable oil, pumpkin puree, and mashed bananas. Stir using a wooden spoon, spatula, or mixer until well mixed.
- Add the eggs and vanilla extract to the mixture, then fold in the dry ingredients until just combined.
- Pour the batter into the prepared loaf pan. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack or slicing to serve.
