- ⅓ cup (79ml) vegetable oil
- 1 cup (242g) pumpkin puree
- 2 large eggs
- 2 teaspoons pumpkin pie spice
- ½ teaspoon salt
- 1 teaspoon baking soda
- ⅓ cup (79ml) buttermilk
- 2 cups (248g) all-purpose flour
- 1 ½ cups (255g) chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×5-inch or 8×4-inch loaf pan with cooking spray.
- In a bowl, mix granulated sugar, brown sugar, vegetable oil, and pumpkin puree. Add eggs, pumpkin pie spice, salt, and baking soda, stirring until smooth.
- Incorporate buttermilk and flour into the mixture, then fold in chocolate chips.
- Pour the batter into the prepared loaf pan and sprinkle some extra chocolate chips on top.
- Bake for 45-55 minutes, testing with a toothpick to ensure it comes out clean before removing it from the oven.
- Allow the bread to cool before taking it out of the pan. Store in an airtight container for up to two days or freeze for up to a month.
