Instructions
- In a large bowl, combine the pumpkin puree, vegetable oil, granulated sugar, egg, and vanilla extract, mixing until fully blended.
- Add baking soda, pumpkin pie spice, baking powder, kosher salt, and all-purpose flour to the mixture, stirring until just incorporated.
- Cover the dough and chill in the refrigerator for 1 to 8 hours.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a nonstick baking mat.
- Drop 2 tablespoons of dough onto the baking sheet, spaced 2 inches apart.
- Bake for 10-12 minutes, until the tops are set and the edges are lightly golden brown.
- Allow the cookies to rest for 5 minutes, then transfer them to a cooling rack. Repeat with the remaining dough and let the cookies cool completely.
