Description

These Pumpkin Truffles boast delightful flavors of pumpkin and spices, combined with creamy white chocolate. Perfect for festive gatherings or as a sweet treat any time.

Ingredients

Scale
  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1/3 cup pumpkin puree
  • 1 ¾ cups finely ground graham cracker crumbs
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • 12 ounces white chocolate chips
  • optional: extra graham cracker crumbs or English toffee bits for garnish

Instructions

  1. In a mixing bowl, combine the softened cream cheese and powdered sugar, and beat until smooth.
  2. Mix in the pumpkin puree and cinnamon until well combined.
  3. Add the graham cracker crumbs and pumpkin pie spice, mixing until the dough is thick and smooth, about 1-2 minutes.
  4. Transfer the dough to a bowl, cover, and refrigerate for about 2 hours.
  5. Line a baking sheet with parchment paper.
  6. Scoop 1 tablespoon of dough and roll it into a 1-inch ball, placing each on the baking sheet two inches apart, until all dough is used, yielding about 20 truffles.
  7. Chill the truffles for 20-25 minutes before dipping in chocolate.
  8. Melt the white chocolate chips in a microwave-safe bowl in 10-15 second intervals, stirring until smooth.
  9. Remove the truffles from the fridge and dip each one in the melted chocolate using a fork, ensuring they are fully coated.
  10. Scrape off excess chocolate and gently place truffles back on the baking sheet.
  11. Sprinkle with English toffee bits or graham cracker crumbs before they fully harden, if desired.
  12. Refrigerate the truffles to set before serving. They can sit at room temperature for a few hours.

Notes

The truffles can be stored in the refrigerator for up to a week.
Feel free to use dark or milk chocolate instead of white chocolate for dipping.
For a fun twist, try adding chopped nuts or dried fruit to the truffle mixture.
