Description

Sausage Stuffed Zucchini Boats are a delightful combination of savory filling and tender zucchini shells. Perfect for a quick dinner or healthy meal, they’re loaded with flavor and easy to prepare!


Ingredients

  • 3 medium zucchini
  • 1 lb ground italian sausage
  • ½ onion, chopped
  • 2 garlic cloves, minced
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper, as needed

Instructions

  1. Preheat the oven to 375°F and line a large baking pan with foil or parchment paper.
  2. Slice the zucchini in half lengthwise and scoop out the flesh, chopping it roughly and setting it aside.
  3. In a large skillet over medium-high heat, cook the sausage for 3-4 minutes until browned.
  4. Add the chopped onion, minced garlic, and chopped zucchini to the skillet, cooking until the sausage is thoroughly cooked and the veggies are softened, about another 3-4 minutes.
  5. Stir in the marinara sauce to combine.
  6. Arrange the zucchini boats on the prepared baking pan, sprinkling with salt and pepper. Fill them with the sausage mixture and top with mozzarella cheese.
  7. Bake for 15-20 minutes until the cheese is melted and the sausage is bubbly. Test that the zucchini is tender; increase cook time if needed for thicker boats.
  8. Serve warm and store leftovers in the fridge.

Notes

Feel free to use turkey sausage as a leaner option.
Add more vegetables into the filling for an extra nutritious boost.
Adjust the spice level by choosing mild or hot Italian sausage.
