Description

S’mores Blondies bring together sweet brown sugar, gooey marshmallows, and rich chocolate in an easy-to-make dessert that satisfies any sweet tooth. Perfect for gatherings or a simple treat at home, these blondies offer a delightful twist on a classic favorite.


Ingredients

  • 1 large egg at room temperature
  • ¾ cup (165g) packed light brown sugar
  • 1 tablespoon (15ml) honey
  • 1 teaspoon (5ml) pure vanilla extract
  • ½ cup (113g) unsalted butter, melted and cooled
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon baking soda
  • ¼ teaspoon baking powder
  • 1 cup (142g) all-purpose flour
  • ⅔ cup (4oz/113g) dark chocolate, coarsely chopped into chunks plus extra for topping
  • 1 ⅓ cups (65g) mini marshmallows
  • 9 individual graham crackers

Instructions

  1. Preheat the oven to 350°F. Prepare an 8×8-inch square baking pan by lining it with parchment paper, leaving a 2-inch overhang on each side, and securing the edges with binder clips.
  2. In a large bowl, whisk together the egg, brown sugar, honey, vanilla, and melted butter until smooth. Add the salt, cinnamon, baking soda, and baking powder, and mix to combine. Sift in the flour and fold until just mixed. Gently fold in the chocolate chunks and mini marshmallows.
  3. Arrange the graham crackers in a single layer on the bottom of the prepared pan. Drop mounds of the batter over the graham crackers, spreading evenly with a small offset spatula. Top with additional chocolate chunks before baking for 23-26 minutes until the top is golden and edges are browned.
  4. Allow to cool in the pan for at least 30 minutes. Lift out using the parchment paper and slice as desired. For gooey s'mores, slice while warm or let cool further for tidy pieces, greasing the knife for clean cuts.

Notes

For a richer flavor, you can use bittersweet or semisweet chocolate chips.
Letting the blondies cool completely results in cleaner slices if desired.
Storing leftovers in an airtight container keeps them fresh and chewy.
