  • ⅔ cup (150g) salted butter, softened
  • 1 cup plus 2 tbsp (225g) granulated sugar
  • 2 tablespoons lemon zest
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon (5ml) pure vanilla extract
  • 2 cups (284g) all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 3 tablespoons (40g) granulated sugar
  • 1 teaspoon lemon zest

Instructions

  1. In a large bowl, cream together softened butter, granulated sugar, and lemon zest using an electric mixer on medium-high speed for 1-2 minutes until slightly fluffy.
  2. Add the egg and mix until well incorporated, then add the egg yolk, vanilla extract, and lemon juice, mixing until smooth.
  3. In a separate medium bowl, combine flour, baking soda, baking powder, and salt, whisking to blend.
  4. Gradually incorporate the dry ingredients into the butter mixture, folding until evenly mixed; the dough will be soft but not sticky.
  5. Cover the bowl and refrigerate the dough for 2 hours.
  6. Preheat the oven to 350°F and line two large baking sheets with parchment paper.
  7. In a small bowl, combine granulated sugar and lemon zest, rubbing together until fragrant to make lemon sugar.
  8. Using a 1.25-oz cookie scoop, portion the dough and roll into smooth balls, coating them in the lemon sugar mixture.
  9. Space the dough balls 3 inches apart on the baking sheets and bake for 9-11 minutes until edges are golden and centers are slightly soft.
  10. Allow cookies to cool for 2 minutes on the trays before transferring to a wire rack to cool completely.

Notes

Chill the dough for a firmer cookie if desired.
Bake for slightly less time for softer cookies.
Experiment with adding a bit more lemon juice for a tangier flavor.
