Ingredients

  • 1/2 cup unsalted butter, room temp
  • 2/3 cup granulated sugar
  • 2 large eggs, room temp
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 cup sour cream, room temp
  • 2 tbsp milk
  • 1 tbsp vanilla extract
  • 1 1/2 cups fresh strawberries, diced small
  • 1 tbsp granulated sugar
  • 1/4 cup strawberry jam or preserves
  • 1/2 cup powdered sugar
  • 23 tsp milk
  • 12 tsp strawberry jam

Instructions

  1. Preheat the oven to 350°F and line a 9×5 loaf pan with parchment paper.
  2. In a stand mixer on high speed, cream the butter and granulated sugar together until light and fluffy, about 4 minutes.
  3. Add the eggs one by one, mixing well after each addition.
  4. Reduce the mixer speed to low and gradually add in the flour, baking powder, and salt.
  5. Incorporate the sour cream, milk, and vanilla extract until the batter is well combined and thick.

Notes

For best results, use room temperature ingredients.
Feel free to add nuts or other fruits for variation.
Adjust the sweetness by altering the amount of sugar or jam used.
