- 2 1/2 cups graham cracker crumbs
- 12 tbsp unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup confectioners’ sugar
- 4 cups heavy whipping cream
- 2 tsp vanilla extract, divided
- 6 tbsp granulated sugar
- 1 (21 oz) can strawberry pie filling
- 1 (21 oz) can blueberry pie filling
Instructions
- Mix graham cracker crumbs with melted butter in a bowl using a fork until moistened. Reserve 3 tablespoons for topping.
- Press the remaining mixture into a 9×13-inch pan that has been sprayed with non-stick spray.
- Using an electric mixer, beat together softened cream cheese, confectioners’ sugar, and 1 tsp vanilla until smooth.
- In another bowl, whip heavy cream, granulated sugar, and 1 tsp vanilla until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until evenly combined.
- Spread 1/3 of the cream mixture (about 3 cups) over the crust.
- Spoon strawberry pie filling over the cream layer and then spread gently.
- Carefully add another 1/3 of the cream mixture and distribute evenly.
- Spoon blueberry pie filling over the second cream layer and spread gently.
- Top with the remaining cream mixture and sprinkle reserved crumbs on top.
- Cover and refrigerate overnight to let layers set.
