- 2 cups finely grated zucchini
- 2 cups granulated sugar
- 1 cup vegetable oil or canola oil
- 3 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- 1 teaspoon ground cinnamon
- ½ cup unsalted butter, room temperature
- 1 package cream cheese, softened
- 2 cups confectioners’ sugar
- 2 teaspoons vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Spray a 15x10x1-inch sheet pan with nonstick cooking spray and set aside.
- In a large bowl, whisk together sugar, oil, eggs, and vanilla extract until the mixture is smooth.
- Stir in the grated zucchini along with any liquid released.
- In another bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon.
- Combine the dry mixture into the wet mixture, stirring until just combined—avoid overmixing.
- Spread the batter evenly in the prepared pan.
- Bake for approximately 25 to 30 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Allow to cool completely.
Notes
Do not squeeze the grated zucchini to retain moisture in the bars.
These bars can be stored in the refrigerator for up to a week.
